So as some of you may know, I can’t eat a wide variety of foods and struggle with IBS. To help with my IBS symptoms I’m currently on the low FODMAP diet as recommended to me by a dietitian. I will be filling up my Food & Health page with recipes, restaurant recommendations and more!
What you’ll need:
So first you’re going to take your banana, peel it and chop it up and place into a medium sized mixing bowl ready to be mashed up.
Next, get your two eggs. Crack them into the same bowl as the bananas and mash together using a masher or fork, mixing them together.
After your banana and eggs have been mashed to make a bumpy mixture, add in some cinnamon and baking powder. I usually guesstimate this part, you don’t need a lot of either, just enough cinnamon to add some extra flavour and the baking power is optional and minimal when added. Cinnamon is optional too, feel free to add whatever you like. Once they’re added, mix it all in together so the mixture is even (if a bit bumpy).
Next, grab a small frying pan and pour in a teaspoon of vegetable oil. Heat and then using a ladle or spoon, etc. pour some mixture into the pan. Depending on how long you’ve heated the pan for, the pancake might cook quite quickly so make sure you keep an eye on it and turn over when necessary. The turning over part can get a little messy but don’t worry too much about that, turn it over so it doesn’t burn on the underside and if some of the top side slips about as it’s wet, just scoop it back together. Repeat until all your mixture is used, eat as is or add your own toppings, my favourites are syrup or dairy, gluten and egg free chocolate spread.
