So I made a marble cake recently and thought I’d share my recipe and some pictures!
I personally love cake and I know it can be hard to find ready-made cakes that suit free-from and fodmap needs without being crammed with loads of fake stuff & preservatives.
What you’ll need:
125g of dairy-free butter
125g of caster sugar
125g of gluten-free self-raising flour
2 tbsp of dairy-free milk (soya, almond, etc.)
1 tsp of vanilla or almond extract (I used almond)
1.5 tbsp of cocoa powder (I used Bourneville)
Firstly, this is a real quick recipe but a little fiddly when it comes to the actual marbling.
Line and grease a cake tin, pre-heat the oven at 180C and add all the ingredients except the cocoa powder, sieving the flour to get rid of any lumps, into a large mixing bowl. Mix together by hand and fold in the flour or if you prefer, use an electronic whisk or mixer (I would suggest still folding the flour in as it tends to get everywhere otherwise).
Get a spoon and dollop some of the cream-y coloured mixture into the tin, followed by a dollop of cocoa mixture, continue until all the mixture is in the tin. I gave up doing this after the first 5/6 dollops and started just spooning it in willy-nilly, it does help with the overall marbling effect though.
Once all the mixture is in the tin, drag a skewer or fork through the mixture to create a swirl. Be careful not to swirl it too much otherwise you’ll simply mix the mixture together and make a chocolate sponge!
Place in the oven for 35-45 mins, checking frequently to ensure it doesn’t burn. Insert a knife or skewer, if it comes out clean, the cake is done! Let it cool and then serve!
