Firstly, apologies for my inconsistent posts, it’s summer & I’ve been super busy. I’m also on holiday in Spain right now.
Recently, it was my mum’s birthday so me and my sisters baked her a birthday cake so that I could join in eating it. I thought I’d share the (really tasty) recipe with you.
225g of Dairy Free Butter
225g of Caster Sugar
225g of Gluten Free Self-Raising Flour
4 tsp of instant coffee
So to start, gather all your ingredients, pre-heat your oven to 180, grab a large mixing bowl and line and grease two cake tins.
Measure and deposit all your ingredients except the coffee into your bowl, and mix until smooth. I prefer to use an electric mixer so I mixed everything, folded in the flour so it wouldn’t poof up everywhere, and then used the electronic mixer. To get a really smooth mixture be sure to sieve in your flour to avoid lumps.
Next, boil the kettle, grab a normal coffee mug and measure in the instant coffee. Once boiled, dissolve the instant coffee in 1-2 tbsp of the hot water and add to the mixture in the bowl. Mix in thoroughly and then split the mixture between your two lined and greased tins!
Bake in the oven for around 30 minutes, until golden brown. The cake should have shrunk away from the cake tin and the surface should spring back when touched.
Next, make the icing.
87g of Icing Sugar
175g of Dairy Free Butter
2tsp of Instant Coffee
Mix the sugar and butter together until smooth, then dissolve the coffee in 1tbsp of boiling water and add to the mixture.
Once the cakes are cool, spread the icing in the middle of the cake and some on the top.
For added tastiness, why not add some walnuts to the top of the cake?
